 THE BIRTH OF A PASSION


          It all began in Maroantsetra. Driven by a passion for our terroir, we laid the foundation for BVBM. Our mission from day one: "To promote the excellence of Madagascar Bourbon vanilla by creating a direct and authentic link between the planters of Ambatosoa and the market.

TERRITORIAL ROOTS


A decisive step for our identity. By acquiring our first company-owned plantation in Maroantsetra, we sealed our unbreakable bond with the land of Ambatosoa. This transition from collector to direct producer allowed us to establish our own standards of excellence and guarantee, from the very source, vanilla grown with total respect for nature. 

MASTERING THE TRANSFORMATION


We crossed a key milestone: in-house mastery of the preparation process. By opening our first drying and curing facility in Maroantsetra, we took total control over quality. This is where our unique expertise in manual bean processing begins, ensuring the intense fragrance and characteristic black appearance of BVBM vanilla.

FROM FLOWER TO VANILLA BEAN 

1-Planting

The journey begins in the heart of the Ambatosoa region, under an ideal humid tropical climate. Our vanilla plants thrive in soil rich in organic matter, benefiting from perfect natural drainage. We cultivate under controlled shade, protecting the vines from direct sunlight to guarantee vigorous leaves and healthy stems. It is this delicate balance between earth, shade, and humidity that gives our vanilla its original strength.

2-Pollination

Each vanilla flower has a lifespan of only a few hours. During this critical window, our technicians intervene with surgical precision to perform the manual "marriage" of the flowers. This expert gesture, repeated thousands of times, directly determines future quality: perfect pollination gives birth to "Extra" or "Prima" category beans which are long, plump and dense.

3-Harvesting and Sorting

Harvesting is a stage of patience. The beans are picked green, at a precise stage of maturity where they are still odorless but bursting with flavor precursors. A rigorous initial sorting is carried out to discard any imperfections. Only the healthiest beans enter our processing circuit, ensuring perfect homogeneity across our batches.

4-Scalding

To stop the vegetative life and trigger enzymatic reactions, the beans undergo scalding. They are immersed in water heated precisely to 60°C for 3 minutes (or 90°C for a short cycle). This thermal shock is the starting point for the birth of the fragrance; it is here that the alchemy happens and the vanilla begins its journey toward its sensory identity.

5-Steaming

Immediately after scalding, the still-warm beans are placed in boxes lined with wool blankets to retain their heat. During this 24-hour steaming process, the beans "sweat" and lose their green color to take on their famous dark brown coat. It is at this stage that the olfactory profile begins to intensify spectacularly.

6-Sun Drying

For several weeks, the vanilla is exposed daily to the sun's rays for a few hours. Spread out on wooden racks, the beans are carefully turned by hand. This natural process stabilizes the product, eliminates excess moisture, and prevents any mold growth, all while concentrating the essential oils inside the bean.

7-Shade Drying

Once stability is achieved, the beans are transferred to ventilated warehouses for shade drying lasting 2 to 3 months. This prolonged rest is essential: the water content gradually decreases from 85% to target levels (between 18% and 38% depending on the category). This slow evaporation allows the aromas to refine without the bean becoming brittle, thus preserving all its suppleness.

8-Refining and Grading

The ultimate step is refining in wooden trunks lined with paraffin paper. This is where the vanillin crystallizes and the aromatic bouquet reaches its full potential. Finally, our artisans proceed with millimeter-precise grading by size and color. The beans are then gathered into elegant bundles, ready to be shipped to enhance your most demanding gastronomic creations.
